Note to self: baking cookies and watching the Victoria Secret fashion show is not the best combination in the world…
I’m not quite sure what has gotten into me lately but I have been on a cooking/baking kick. I guess with the Holidays it just brings out the best in us right??
My friend Monica is hosting a Cookie Exchange Party tonight and I knew just the cookie to make. I found this recipe last year and brought them to a party. Everyone loved them and more importantly, I didn’t have to buy a thousand ingredients and slave over the oven.
I found this recipe on the blog How Sweet It Is. She has so many delicious recipes and baked goods on her blog. Not to mention her writing and photography is amazing- every picture makes you hungry.
This recipe is SO easy. All you need is a box of red velvet cake mix, 2 eggs, vegetable oil, vanilla and white chocolate chips.
Jessica used regular chocolate chips in her recipe, but I figure white would look a little more festive. I also added Hershey’s White Peppermints kisses on each one.
Ingredients:
1 box Red Velvet cake mix
2 eggs
1 teaspoon vanilla
1/3 cup vegetable oil
3/4 cup chocolate chips
Preheat oven to 350.
In an electric mixing bowl, combine cake mix, oil, eggs, and vanilla. Mix until a dough forms. Fold in chocolate chips. Roll into balls and bake at 350 for 8 minutes.
Side Note: The dough can be very sticky! I would recommend either putting it in the refrigerator for about 10 minutes or spraying cooking spray on your hands first before you roll them. The dough is very red!!!
I let the cookies cook for about a minute extra
Makes about 24 cookies.
Go ahead and unwrap the Hershey Kisses while the cookies are in the oven and then after they have cooled for a few minutes, insert one kiss in the center of each cookie
